If it’s a notebook for you, break into topics and a structure that seems logical to you.
Also, put it together in a way that plays to your strengths. For example, if you are a visual person, make it very visual. If you’re tactile, use materials with textures. This explains different types of learners, written about children, but the concepts apply here:
